Raw Vegan Recipes

We would like to share with you some of our delicious healing foods we prepare and eat in our community. We eat simple meals with no salt, oils, powders or other so called “superfoods”. Fruits, veggies, and other fresh raw plants are our the superfoods. If you don’t have some of the ingrediants or plants available, try your best to substitute for something similar (for example, iñakus with akee or hass avocados). Enjoy the beautiful vibes of this living food path. 

For 1 person

Ingredients:

  • 3 ripe medium-size iñakus
  • 2 orito bananas or other bananas
  • 1 spirilized cucumber
  • 1 small spirilized carrot
  • 1 diced slicing tomato
  • 1 piece of purple cabbage in juliennes
  • 3 diced florets of broccoli
  • Half medium size avocado
  • A small piece of borojó fruit
  • 2 grated medium size tomatoes
  • 1 lemon
  • 2 hot peppers (choose your spiciness)

How to prepare:

Make the sauce mashing the iñakus together with the oritos, the borojó and the avocado. Add the grated tomatoes, the lemon juice and the chilis until everything is well incorporated.

In a bowl put the cucumber, the carrot, the broccoli, the tomatoes and cabbage and mix together with the sauce. Enjoy. 

For 1 person

Ingredients:

  • 4 slicing tomatoes
  • 1 small piece of cauliflower
  • Half medium size avocado
  • Half bunch of parsley leaves
  • 1 piece of ginger root
  • Half bunch of turmeric leaves
  • 1 lemon
  • 1 hot pepper (choose your spiciness)

How to prepare:

Cut the upper part of the tomatoes and remove the pulp and seeds inside. Put all the pulp in a bowl.

Grate the cauliflower and ginger and add them to the bowl with the tomato pulp. Finely chop the parsley, turmeric leaves, and the hot pepper and add them all to the bowl. 

Mash the avocado and add it to the bowl. Add juice of the lemon in the bowl and mix it all together. 

Stuff the tomatoes with the stuffing mix and enjoy. 

 

For 1 person

Ingredients:

  • 4 ripe medium-size iñakus
  • 5 orito bananas or other bananas
  • A bunch of soaked raw peanuts
  • 1 grated apple (any type will work. Ambrosia or Pink Lady are our choices)


How to prepare:

In a bowl, make a thick sauce mashing the iñakus with the bananas very well.

In a manual hand crank food processor, finely chop the raw peanuts with and add to a bowl.

Add the grated apple to the same bowl, and mix well.

In a glass make layers with the peanut mixing and the iñaku sauce.

Enjoy.

For 1 person

Ingredients:

  • A piece of fresh heart of palm
  • 2 medium size slicing tomatoes
  • Half grated carrot
  • 2 collard green leaves
  • A bunch of chopped cilantro (or forget this if you don’t like cilantro)
  • 1 Lemon
  • 1 hot pepper (choose your spiciness)

How to prepare:

In a bowl, make a thick sauce mashing the iñakus with the bananas very well.

In a manual hand crank food processor, finely chop the raw peanuts with and add to a bowl.

Add the grated apple to the same bowl, and mix well.

In a glass make layers with the peanut mixing and the iñaku sauce.

Enjoy.
